Cooking Tricks
- To minimize the amount of oil needed in stir-frying, ensure
the wok is very hot before adding the oil. Don't add the food
until the oil is sizzling hot - this reduces absorption by the
food.
- How to Make Vegetable Broth: Use this broth to sauté
vegetables without adding fat, in place of plain water when cooking
rice for added flavor.
1. Wash, peel and slice your favorite vegetables, such as carrots,
onions, mushrooms, celery, leeks and garlic.
2. Place vegetables in a large pot and add herbs, such as thyme,
bay leaf, cloves & coriander seed.
3. Add water to cover, and bring to a simmer over moderate heat.
4. Simmer, uncovered, 20 minutes.
5. Strain through a sieve
